Vintner has wine-dispensing system

TRAVERSE CITY — Local wine pioneer Edward O'Keefe Jr. launched a new dispensing system for serving wine by the glass.

The Emerald Wine Systems is a bag-in-box dispener that allows for by the glass sales of high volume, high value wine.

The system is designed to eliminate waste, reduce labor and shipping costs and provide more accurate wine pours.

"We have been working on this wine dispenser for more than two years and the result will completely revolutionize wine by the glass sales," said a statement from O'Keefe, founder of the award-winning Chateau Grand Traverse Winery on Old Mission Peninsula.

The system is designed for use in restaurants, tasting rooms, wine bars, cruise ships, banquet facilities and other venues that offer wine by the glass.

The dispenser can be operated by wait staff or as a self-serve machine, and pour amounts can be programmed by the glass, carafe or bottle.

It utilizes oygen inhibiting vacuum pump technology to insure consistent taste and quality, and uses bag and pouch packaging to reduce the packaging costs over bottles by 85 percent.

The system is manufactured in Michigan and available in four- or eight-spout configurations.

Other options include a mobile, self-powered stand-alone system, a built-in credit card or room key reader, and an LCD screen to display ads, videos or wine information.

O'Keefe's partner in the project is Bob Kalik, a long-time wine industry attorney and former president of the American Vinters Association.
