Reflections: It's schmaltz, my dear

My wife and I both enjoy oven-roasted chicken. She likes the drumsticks and thighs, and I favor the wings and breast meat. We are a match made in the henhouse. Recently, my wife was baking a pan of thighs and, when they were ready, she asked me to remove them from the oven. They were golden brown and smelled delicious. I noticed that the pan had a generous amount of chicken fat pooled on the foil lining. I wanted to impress her with my culinary knowledge and I referred to the fat as "schmaltz."
