---- — Retired teacher Joann Koenigsknecht, of Gaylord, submitted today's recipes. The first is a Weight Watchers recipe that her entire family loves — "even the grandkids," she said.
The second is a relish recipe that she said has been passed around among most of her friends.
W.W. Taco Soup
1 large jar of white beans, undrained
2 cans unsalted corn, undrained
1 large can diced tomatoes, undrained
1 package taco seasoning
1 package dry ranch dressing
Dump all ingredients into crock pot and cook four hours on high or six to eight hours on low.
Optional: Some people add a pound of cooked crumbled ground turkey or beef, though that is not part of the original recipe.
Hot Dog Relish
4 quarts ground cucumbers
1 pint ground onions
2 or 3 ground green peppers
1 ground red pepper
½ c. kosher salt
7 c. sugar
1 c. water
¾ c. flour
3 t. turmeric
1 quart cider vinegar
½ box mustard seed
Grind the vegetables (medium grind) and sprinkle with salt. Let stand for two hours or overnight. Drain and rinse. Add 7 c. sugar and stir.
Mix water, flour and turmeric in a small bowl, then pour into relish. Add vinegar and mustard seed. Bring to a rolling boil and simmer for five minutes, stirring continuously, or mixture will stick to the bottom of pan. Use for hot dogs or whatever you want.
